The taste of soda is first of all water quality. Everything else is the recipe

The basis of any soft drink is water. In most cases it goes through reverse osmosis to become a "neutral" base for the recipe. Then comes final filtration before bottling, sterile air to displace oxygen, and cleanliness at every step.

Water is the main ingredient. Everything depends on its purity

Water in a soft drink is not just a "solvent". Any foreign smell, aftertaste or contamination – and the batch is lost. Producers use reverse osmosis to make the water neutral, but the system itself needs protection.

A common situation

A plant installed a reverse osmosis system, but the membranes fail after 8–12 months instead of the stated 3 years. The reason is almost always the same – no proper pre-filtration at the inlet. One membrane costs 10–30 times more than the pre-filter that would have protected it.

Air and CO₂ touch the product during bottling – this is also a source of risk

Filling into PET, glass, Tetra Pak, oxygen displacement, container purging

Bottling uses compressed air or carbon dioxide – to displace oxygen, create counter-pressure, and purge containers before filling. If this air is not sterile, bacteria get into the product at exactly this moment, after the whole process.

An important detail about CO₂

The carbon dioxide for carbonation also needs filtration. Gas from an external source may contain foreign particles and microorganisms – especially if returned CO₂ is used.
